Strawberry and Marshmallow Parfait

There is no need for cooking in this recipe but 3 hours needed for refrigeration.
Ingredients
- 85g packet strawberry flavoured jelly crystals shopping list
- 2 cups boiling water shopping list
- 250g punnet strawberries, chopped shopping list
- 1/2 litre vanilla ice-cream shopping list
- 100g white or pink marshmallows, halved shopping list
- whipped cream for decoration shopping list
- 6 whole strawberries, extra shopping list
How to make it
- Stir jelly crystals in water in bowl until sugar crystals have dissolved; refrigerate till set.
- Process half the strawberries in food processor for 30 seconds.
- Layer ice-cream, jelly, remaining chopped strawberries, marshmallows and strawberry puree into six parfait glasses. Decorate with whipped cream and strawberries.
