Baked Apple Puffed Pancake

- * 4 tablespoons real butter shopping list
- * 4 large apples, peeled and sliced thinly shopping list
- * 3/4 cup all-purpose flour shopping list
- * 3/4 cup milk or cream shopping list
- * 1/2 teaspoon salt shopping list
- * 1/4 teaspoon baking powder shopping list
- * 1 tablespoon sugar shopping list
- * 4 large eggs shopping list
- TOPPING: shopping list
- * 1/3 cup sugar shopping list
- * 1 teaspoon cinnamon shopping list
How to make it
- Preheat oven to 400 degrees.
- Spray two 8-inch round cake pans with cooking spray.
- Place 2 Tbsp butter in each of the pans.
- Place the pans in the oven until the butter has melted.
- Remove pans from oven.
- In a medium mixing bowl, beat the flour, 1/4 teaspoons baking powder, sugar, salt, milk and eggs until smooth.
- Arrange the apple slices into the two pans onto the melted butter.
- Divide the batter evenly between pans.
- Spread evenly over the apple slices.
- Mix the sugar and cinnamon in a small mixing bowl.
- Sprinkle mixture over the batter in each pan.
- Bake until puffed and golden brown, about 20-25 minutes.
- Serve warm with butter and pure maple syrup, if desired.

I have done this with sliced peaches in the past and suppose any fruit would work. The apples would have a wonderful "pie" effect for me! My thanks and my five, lori ~ ~
