Potato Leak Soup

- 2 leeks shopping list
- 400g potatoes shopping list
- 1 clove of garlic shopping list
- Half a red chili (full one if you like it spicy) shopping list
- 750ml vegetable stock shopping list
- Spoon of crème fraiche shopping list
- sea salt and freshly ground pepper shopping list
- Knob of butter shopping list
How to make it
- Peel potatoes and wash and chop leeks
- Chop garlic and chili
- In a thick bottomed pan melt butter over medium pan
- Saute leeks for aprox 4 -5 minutes until they start get soft
- Mix in Garlic, chili and potatoes and stir together for about 1 minute
- Pour in Stock and cook at a simmer until the potatoes are cooked (aprox 15-20 mins)
- Now blitz the entire mixture until it becomes one even liquid and all lumpy pieces are removed (use a blender or a staaf mixer for this)
- Stir in Crème Fraiche
- Add Salt and pepper to taste
- Serving suggestion:
- Eat with my Irish Brown Soda Bread with salted irish butter (see my other recipe)
