How to make it

  • Peel potatoes and wash and chop leeks
  • Chop garlic and chili
  • In a thick bottomed pan melt butter over medium pan
  • Saute leeks for aprox 4 -5 minutes until they start get soft
  • Mix in Garlic, chili and potatoes and stir together for about 1 minute
  • Pour in Stock and cook at a simmer until the potatoes are cooked (aprox 15-20 mins)
  • Now blitz the entire mixture until it becomes one even liquid and all lumpy pieces are removed (use a blender or a staaf mixer for this)
  • Stir in Crème Fraiche
  • Add Salt and pepper to taste
