Salmon Bake With Pecan Crunch Coating Recipe
SALMON BAKE WITH PECAN CRUNCH COATING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Looney Estate in Addison, Texas in 1992.

Ingredients
  • 2 tablespoons Dijon mustard
  • 2 tablespoons melted butter
  • 4 teaspoons honey
  • 1/4 cup fresh bread crumbs
  • 1/4 cup pecans finely chopped
  • 2 teaspoons chopped parsley
  • 4 salmon fillets
  • 1 teaspoon salt
  • 2 teaspoons freshly ground black pepper
  • Lemon wedges

Directions
  1. Mix first 3 ingredients in bowl and set aside.
  2. Mix together next 3 ingredients in bowl and set aside.
  3. Season each fillet with salt and pepper then place on lightly greased baking sheet.
  4. Brush each with mustard honey mix then pat top of each fillet with bread crumb mix.
  5. Bake at 450 for 10 minutes per inch of thickness measured at thickest part.
  6. Serve with lemon wedges.
