Salmon Fillets With A Butter Sauce Recipe
SALMON FILLET WITH A BUTTER SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Inman Estate in Mineral Wells, Texas in 1990. Another tried and true recipe.

Ingredients
  • 6 salmon fillets
  • 6 ham slices
  • 3 ounces unsalted butter at room temperature
  • 6 garlic cloves crushed
  • 15 black olives finely chopped
  • 3 teaspoons sun dried tomato paste
  • 20 sage leaves
  • 12 long chives
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Lemon wedges

Directions
  1. Mix together butter, garlic, olives, tomato paste, salt and black pepper until well blended.
  2. Cut a deep long slit through each salmon fillet taking care not to cut right through.
  3. Spread butter mixture into slit then carefully close the slit.
  4. Place sage leaves over slit enclosing the butter.
  5. Place a slice of ham over slit then wrap around salmon.
  6. Knot a chive around each salmon fillet to secure.
  7. Cook salmon over hot coals 5 minutes per side then serve with a lemon wedge.
