Grand Prize Rhubarb Muffins

After just being posted to where we live now there was a Maritime wide muffin contest. The day finally arrived when they announced the grand prize winning recipe. Pen in hand (as they were also giving out the recipe) I waited. Read more Think of Alvin and the Chipmunks that was how fast the ingredients were listed and reamed off. Well this is how I make them .... they are delicious.... but I am really not sure If I got the original recipe exactly right. Regardless these are worth making and my family loves them. See less
Ingredients
- 2 cups flour shopping list
- 3/4 cup sugar shopping list
- 1 1/2 tsp baking powder shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp baking soda shopping list
- 3/4 cup chopped pecans shopping list
- 1/4 cup grapeseed oil ( or canola) shopping list
- 2 tsp orange zest shopping list
- 3/4 cup orange juice shopping list
- 1 large egg shopping list
- 1 1/3 cup chopped rhubarb shopping list
How to make it
- Preheat oven 350*
- Combine dry ingredients add fruit toss to coat
- make a well in center
- In smaller bowl beat egg
- add oil and juice beat well
- Pour into dry
- mix just until dry is just moistened
- Spoon into sprayed or lined muffin cups
- Bake at 350* 25-30 minutes
