German Potato Salad Recipe

Ingredients

9 red bliss potatoes, unpeeled

6 slices bacon

3/4c chopped onion

2T flour

2T sugar

2t salt

1/2t celery seed

1/8t black pepper

3/4c water

1/3c white vinegar

*another potato can be used but you wont get the same texture as a waxy red bliss.

Directions

Boil potatoes until tenber but firm, dran, cool (cold water can help this along) and slice thin. set aside.

In a large skillet cook bacon over med-high heat until very brown; set aside leaving drippings in pan. Set aside. (while the bacon is being cooked combine flour through pepper in a smal bowl).

Saute onions in drippings until golden brown. Stir in flour mixture and cook until bubbly stirring constantly.

Remove from heat, add water and vinegar then return back to heat and bring to a boil stirring constantly (1 minute).

Carefully stir potatoes and bacon back into skillet and heat through.
