Spicy Bourbon Sausage Chili Recipe
SPICY BOURBON SAUSAGE CHILI This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woods Estate in Canton, Texas in 1988.

Ingredients
  • 1 pound cooked pinto beans
  • 1 pound kielbasa sausage cut into very small pieces
  • 1 tablespoon olive oil
  • 1 large red onion chopped fine
  • 2 large jalapeno peppers chopped fine
  • 2 cans diced tomatoes with green chilies
  • 1 clove garlic mashed
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon oregano
  • 3 teaspoons salt
  • 2 teaspoons hot chili powder
  • 1 teaspoon cayenne pepper
  • 1/4 cup bourbon
  • 4 dollops sour cream
  • 1/4 cup chopped green onions
  • 1/2 cup grated pepper jack cheese

Directions
  1. Brown sausages in olive oil then drain well.
  2. Add onions, jalapeno peppers and tomatoes to meat and simmer 45 minutes.
  3. Add spices and bourbon and continue cooking for several hours.
  4. Serve in bowls with sour cream, chopped green onions and pepper jack cheese.
