No Work Baked Chicken Recipe
This chicken is so flavorful. it has apricot jam and mustard for a sweet-hot flavor,salted cashews to lend a salty crunch. This one's a keeper.

Ingredients
  • 3Tbs plus 1 tsp apricot jam
  • 2Tbs prepared mustard
  • 1/4c chopped salted nuts,such as cashews or macadamia
  • 1/4c plain bread crumbs
  • 2Tbs flour
  • 4 large boneless,skinless chicken breast halves(about 6 oz. ea.)

Directions
  1. Heat oven to 350. Combine 2tbs of the jam,the mustard,chopped nuts and bread crumbs in a small bowl to form a thick paste.
  2. Lightly flour chicken;shake off excess. Spread 1 tsp. jam on each chicken breast,covering both sides Place breasts in baking dish large enough to hold them. Spread seasoned paste on top.
  3. Bake for 20 mins or till chicken is no longer pink in the center. Place under heated broiler to crisp,1 to 2 mins. Great served with an easy pilaf.
  4. Easy Rice Pilaf:
  5. Prepare your favorite white rice following package directions. During the last 3 to 4 mins of cooking,stir in some thawed green peas,chopped dried apricots and chopped salted nuts such as cashews.
