This salad goes GREAT with BBQ'd chicken. Not just for summer fare, I make this salad when the winter-blues have a grip on me.

Ingredients
  • 2 c watermelon chunks
  • 1/2 c Greek Feta, cubed or crumbled
  • 1/4 c Green Onion, sliced
  • 1/4 c Yellow Bell Pepper
  • Dressing:
  • Juice of 1 Lime
  • 1 1/2 tsps Sugar
  • 1/4 tsp Hot Sauce or to taste
  • Optional:
  • 1/2 tsp fresh grated Ginger

Directions
  1. Mix dressing ingreds in salad bowl
  2. Add salad ingreds
  3. Toss
  4. Enjoy!
