How to make it

  • Using a food processor thinly slice the potatoes and leeks.
  • Slice ham thinly. Using a 9” by 11” baking dish that has been spray liberally with nonstick spray, place a layer of potatoes in the bottom, next layer ½ of the very thinly sliced leeks. Cover these 2 layer with ½ of the parmesan cheese and ½ of the sliced ham. Repeat the layers as before. In a blender put the cup of ½ & ½ and flour salt and pepper to taste, pulse blend to mix in flour, salt, and pepper thoroughly. Pour mixture around the outside edges and over the top. Garnish the top with a generous amount of paprika, and fresh sprigs of thyme. Cover with aluminum foil and bake in 375 degree oven for 50-60 minutes, remove thyme sprigs and serve.

    I'm wondering if the addition of milk might make for a less dry end result? The last time I ate Scalloped Potatoes at a friend's house, she hadn't used flour or milk but light cream alone and it just turned out too solid.

    I do like the use of leeks, ham and Paprika though.
