By using leeks instead of onions it gives a more delicate flavor, allowing the parmesan, paprika and thyme thier own distinction.

I'm wondering if the addition of milk might make for a less dry end result? The last time I ate Scalloped Potatoes at a friend's house, she hadn't used flour or milk but light cream alone and it just turned out too solid.
I do like the use of leeks, ham and Paprika though.
