Cruising the fridge for a simple lunch, I spied the last breaded chicken cutlet from a previous dinner (italian seasoned bread crumbs with lemon zest) and threw together this "I want more" sandwich

Ingredients
  • 1 pre-cooked breaded chicken breast
  • 2 slices swiss cheese
  • 1 sweet roasted red pepper (from jar)
  • 1 tbsp mayonnaise
  • 1 tsp horseradish
  • 1 Arnold's whole wheat Sandwich Thin or two slices wheat bread

Directions
  1. Place the chicken breast on a plate
  2. Cover with roasted pepper
  3. Cover this with the swiss cheese slices
  4. Microwave for up to one minute (don't overdue or cheese gets hard)
  5. Spread mayo and horseradish on each side of the bread
  6. Slide the chicken into the bread and enjoy!
