White Pimento Cheese

- 1 c shredded sharp white cheddar cheese shopping list
- 1 c shredded Monterrey Jack cheese shopping list
- 1 c shredded gruyere cheese shopping list
- 1/2 c finely chopped pecans shopping list
- 1 c real mayo (I use Dukes) shopping list
- 1/2 t fresh ground black pepper, or white pepper shopping list
- 1/2 c pimentos, drained and diced shopping list
How to make it
- In a medium bowl, combine the cheeses and pecans.
- Stir in mayo and pepper until well blended.
- Gently fold in pimentos
- Cover and refigerate about 2 hours (can make day ahead)

I know pimento cheese is huge in the south but never had it...This sounds like something I'd love...Gruyere is one of my faves...:)
