White Pimento Cheese Recipe
Great spin on pimento cheese, uses all white cheese and pecans to change it up Serve on sourdough bread or as finger sandwiches for your next party! From one of my cooking magazines. Allow to chill for a couple of hours or more.

Ingredients
  • 1 c shredded sharp white cheddar cheese
  • 1 c shredded Monterrey Jack Cheese
  • 1 c shredded Gruyere Cheese
  • 1/2 c finely chopped pecans
  • 1 c real mayo (I use Dukes)
  • 1/2 t fresh ground black pepper, or white pepper
  • 1/2 c pimentos, drained and diced

Directions
  1. In a medium bowl, combine the cheeses and pecans.
  2. Stir in mayo and pepper until well blended.
  3. Gently fold in pimentos
  4. Cover and refigerate about 2 hours (can make day ahead)

I know pimento cheese is huge in the south but never had it...This sounds like something I'd love...Gruyere is one of my faves...:)
