Ingredients
  • Vinaigrette:
  • 2Tbs sherry vinegar
  • 1tsp dijon mustard
  • 1 small shallot,finely chopped
  • salt and pepper
  • 2Tbs walnut oil
  • 2Tbs canola oil
  • Salad:
  • 1/2c shinned hazelnuts
  • 8c mixed torn lettuce leaves,rinsed and spun dry
  • 4 radishes,thinly sliced
  • 2Tbs fresh,chopped parsley
  • 2Tbs fresh,chopped chervil
  • salt and pepper to taste
  • 2 ounces mild goat cheese,thinly sliced in 4 rounds

Directions
  1. Vinaigrette: In a small bowl,combine vinegar,mustard,shallot,salt and pepper. Slowly whisk in the walnut and canola oils;set aside
  2. Salad: Set oven at 250. Spread hazelnuts on a rimmed baking pan. Toast them for 10 mins. or till they are fragrant and lightly golden;cool. Coarsely chop the nuts.
  3. In a large bowl,combine lettuces,radishes,parsley and chervil.
  4. Toss with enough vinaigrette to moisten salad. Add salt and pepper. Taste for seasoning and add more salt and pepper if you like.
  5. Divide the salad among four plates. Garnish with hazelnuts and goat cheese. Serve with crusty bread.
