Summer Salad

- Vinaigrette: shopping list
- 2Tbs sherry vinegar shopping list
- 1tsp Dijon mustard shopping list
- 1 small shallot,finely chopped shopping list
- salt and pepper shopping list
- 2Tbs walnut oil shopping list
- 2Tbs canola oil shopping list
- Salad: shopping list
- 1/2c shinned hazelnuts shopping list
- 8c mixed torn lettuce leaves,rinsed and spun dry shopping list
- 4 radishes,thinly sliced shopping list
- 2Tbs fresh,chopped parsley shopping list
- 2Tbs fresh,chopped chervil shopping list
- salt and pepper to taste shopping list
- 2 ounces mild goat cheese,thinly sliced in 4 rounds shopping list
How to make it
- Vinaigrette: In a small bowl,combine vinegar,mustard,shallot,salt and pepper. Slowly whisk in the walnut and canola oils;set aside
- Salad: Set oven at 250. Spread hazelnuts on a rimmed baking pan. Toast them for 10 mins. or till they are fragrant and lightly golden;cool. Coarsely chop the nuts.
- In a large bowl,combine lettuces,radishes,parsley and chervil.
- Toss with enough vinaigrette to moisten salad. Add salt and pepper. Taste for seasoning and add more salt and pepper if you like.
- Divide the salad among four plates. Garnish with hazelnuts and goat cheese. Serve with crusty bread.
