Crab Souffle Recipe
I wasn't sure how to catagorize this recipe because it would be great as an appetizer too. So you can either make it as a main course in an 8x8 or as an appetizer in a mini cupcake pan.

Ingredients
  • 1 lb Crab Meat
  • 1 cup fat free half and half
  • 1/2 cup cooked chopped sweet red peppers
  • 1/2 small onion, diced
  • 1/4 cup dried bread crumbs
  • 1/3 tsp dry mustard
  • 2 large eggs (or egg substitute)
  • 1/3 tsp salt
  • 1/3 tsp black pepper
  • 1/2 tsp wocestershire sauce
  • 1/4 tsp cayenne pepper
  • 1/4 tsp ground nutmeg
  • 1 T chives

Directions
  1. Mix all ingredients except crab. Fold in crabmeat gently trying to avoid breaking up lumps. Bake in preheated 400 degree oven for 15 to 20 minutes or until firm. Toothpick should come out clean. Bake in a 8x8 baking dish. Serve hot.

Dione, this would be so much easier than crab cakes and they wouldn't have to be fried, great idea.....:)


Thank you for this. It sounds very delish! I thought "souffle" meant beaten egg whites folded into the body of the recipe.

I hope I am wrong ( I'm lazy!!) Please advise. I do love crab!!
