How to make it

  • Mix first 5 ingredients and set aside. Coarsely chop spinach and steam until wilted.
  • Saute onion, pepper, and mushrooms. Stir in spinach, nutmeg, bail, salt, and pepper.
  • Stir vegetable mixture into egg mixture. Spread into well-greased 9x13 pan.
  • Bake at 350 for 35-40 minutes or until lightly golden and firm on top. Let cool for 15 minutes.
  • To serve, cut into 24 "fingers". Serve warm or at room temperature.
