How to make it

  • Cook raspberries in 1 1/2c water until the berries are very soft, about 5 minutes.
  • Remove the berries from heat, and puree in blender or food processor.
  • Return the puree to th epot, and add sugar.
  • Stir, cooking over low heat.
  • In a bowl, combine starch and 1/2 c water.
  • Gradually, slowly add to fruit, stirring constantly until th emixture thickens.
  • Remove from heat, pour into a bowl, and chill.
  • Garnish with heavy cream (plain or whipped) just before serving.
