Kisel is a Russian dessert (I believe) that is primarily a thickened fruit puree.

Ingredients
  • 2 c fresh raspberries
  • 2 c water
  • 2/3 c sugar
  • 1/4 c corn starch (or potato starch)
  • 1 c heavy cream

Directions
  1. Cook raspberries in 1 1/2c water until the berries are very soft, about 5 minutes.
  2. Remove the berries from heat, and puree in blender or food processor.
  3. Return the puree to th epot, and add sugar.
  4. Stir, cooking over low heat.
  5. In a bowl, combine starch and 1/2 c water.
  6. Gradually, slowly add to fruit, stirring constantly until th emixture thickens.
  7. Remove from heat, pour into a bowl, and chill.
  8. Garnish with heavy cream (plain or whipped) just before serving.
