Sauteed Halibut With Kiwi Chardonnay Sauce Dated 1969 Recipe
SAUTÉED HALIBUT WITH KIWI CHARDONNAY SAUCE DATED 1969 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ritchie Estate in Arlington, Texas in 1984.

Ingredients
  • 4 halibut fillets
  • 1 teaspoon salt
  • 1/4 cup flour
  • 4 tablespoons clarified butter
  • 1 kiwi peeled and sliced into pieces
  • Sauce:
  • 3 kiwis peeled
  • 3 shallots diced
  • 3/4 cup chardonnay wine
  • 1/2 pound sweet butter cold and cut into small cubes
  • 1/2 teaspoon salt

Directions
  1. Sprinkle halibut with salt then lightly dust fish with flour.
  2. In large skillet place clarified butter and heat it on medium until hot.
  3. Sauté floured fillets 4 minutes per side.
  4. On each of 4 individual serving plates place one of the sautéed halibut fillets.
  5. Pour sauce over sauce and garnish each dish with 2 of the kiwi slices
  6. To make sauce place kiwis in a blender and puree them.
  7. In a small saucepan place the pureed kiwi, shallots and chardonnay.
  8. Heat ingredients on high heat and cook 6 minutes then reduce heat to medium.
  9. While whisking constantly add butter cubes one at a time then add salt and stir it in.
  10. Remove sauce from heat and keep it warm until you are ready to serve it.
