How to make it

  • Wash endive and remove outer leaves.
  • Melt butter in a large skillet, and brown endive lightly on all sides.
  • Combine stock,lemon juice, and sugar.
  • Pour liquid over the endive.
  • Reduce heat, cover skillet, and simmer 20 minutes, or until endive is tender.
  • Season to taste with salt.

    I've got three small bunches of Belgian endive in the fridge. They were originally planned for something else which did not come to be. I'm going to try this tonight and use them up. I'll let you know how I made out with them.
