Chicken In Cream Sherry Sauce Recipe
This is a simple recipe, a real crowd pleas-er. Great entree to serve at casual dinner parties or anytime. Once the slow cooking starts you have time to relax before guests arrive while your main entree slow cooks to perfection.

Ingredients
  • 4 large skinless chicken breast cut in half.
  • Small amount light cooking oil.
  • __
  • 1/4 cup butter
  • 1 (0.7 oz.) dry Italian salad dressing mix
  • 1 (10 oz) can cream of mushroom soup
  • 2/3 cup sliced fresh mushrooms
  • 1/2 cup Cream Sherry ( no substitutes please)
  • 8 oz. package cream cheese
  • Fresh chopped chives
  • ___
  • 1 box Thin Spagetti or Angel hair pasta will do.

Directions
  1. Note; Use a large heavy bottom skillet that has a good fitting lid.
  2. In a hot skillet with a small amount of cooking oil.
  3. Quickly fry the chicken pieces just until lightly browned on both sides.
  4. Turn off the heat & set aside.
  5. In a med. sauce pan melt the butter & cream cheese over med/low heat, stir until creamy smooth.
  6. Add all the remaining ingredients except the chives.
  7. Cook and stir the sauce just long enough to combine all of the ingredients well.
  8. Pour the sauce over the chicken pieces. in the skillet.
  9. Cover & cook over a low heat setting for 3 to 4 hours.
  10. No need to stir but once or twice.
  11. Prepare the pasta as directed on box
  12. -----
  13. Place a stack of pasta on each plate
  14. Top with the chicken & sauce.
  15. Sprinkle with chives.
  16. Serve along with a nice green salad and some garlic bread and you have a great meal!
