PASTA POULET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Thomason Estate in Wylie, Texas in 1992.

Ingredients
  • 2 large chicken breasts skinned and cut into thin strips
  • 16 large shrimp cleaned and deveined
  • Flour to dust shrimp and chicken
  • 1/2 cup olive oil
  • 2 teaspoons chopped garlic
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 1 cup dry white wine
  • 4 cups sliced fresh mushrooms
  • 16 plum tomatoes cut into wedges
  • 1 teaspoon chopped fresh parsley
  • 1/4 cup clam stock
  • 1 pound fresh linguine cooked and kept warm

Directions
  1. Dust chicken and shrimp with flour and set aside.
  2. In large skillet heat oil over medium heat then add chicken and sear 1 minute on each side.
  3. Add shrimp and garlic and sauté stirring constantly for 2 minute turning shrimp after 1 minute.
  4. Add salt, pepper and wine then cook to reduce for 2 minutes.
  5. Add mushrooms, tomatoes, parsley and stock then cook 2 minutes longer and toss with hot pasta.
