How to make it

  • Heat butter in large saucepan over low heat, saute onion for 2 minutes, add garlic and curry powder. Stir in red lentils, pour a little water into sauce pan, add pumpkin and potato, cover and simmer for 10 minutes.
  • Check that vegetables are tender before stirring in coconut cream/ milk, and frozen peas, simmer for a further 2 minutes and adjust salt and pepper to taste.
  • Serve over rice and garnish with fresh herbs.
