Curried vegetable stew

- 2 medium potatoes, peeled and diced shopping list
- 1/2 pumpkin, peeled and diced shopping list
- 1/4 cup red lentils shopping list
- 1 onion, finely chopped shopping list
- 2 cloves garlic, crushed shopping list
- a tablespoon fresh herbs (coriander, parsley) chopped shopping list
- 200ml coconut milk/ cream shopping list
- a tablespoon curry powder shopping list
- 1/2 cup frozen peas shopping list
- a tablespoon butter shopping list
- little water shopping list
How to make it
- Heat butter in large saucepan over low heat, saute onion for 2 minutes, add garlic and curry powder. Stir in red lentils, pour a little water into sauce pan, add pumpkin and potato, cover and simmer for 10 minutes.
- Check that vegetables are tender before stirring in coconut cream/ milk, and frozen peas, simmer for a further 2 minutes and adjust salt and pepper to taste.
- Serve over rice and garnish with fresh herbs.
