Miz Lunaseas Banana Rum Cream Pie Tweaked For Non-dairy

- Crust: shopping list
- 1 1/4 cups graham cracker crumbs from 9 (4 3/4 inch by 2 1/4 inch)crackers shopping list
- 5 T unsalted butter, melted shopping list
- 1 tsp. curry powder (preferably Madras) shopping list
- 1/4 t. cinnamon shopping list
- 2 Tablespoons dark brown sugar shopping list
- Filling: shopping list
- 8 oz "Better than Cream Cheese" , Tofutti brand shopping list
- 6 Tablespoons dark brown sugar shopping list
- 1 tsp. finely grated lemon zest shopping list
- 1container (9 oz) Cool Whip Free (green lid Kraft Brand), thawed shopping list
- 4 tsp. dark rum ( I used 4 Table.) shopping list
- 4 firm-ripe bananas shopping list
- Need: 9 inch pie plate shopping list
How to make it
- Put oven rack in middle position and preheat oven to 350 degrees F
- Stir all the ingredients for the crust together in a deep bowl with a fork until well combined. Set aside 1 Tablespoon of crumb mixture; Press remaining mixture into pie plate creating a crust with sides/edges. Bake crust 10 minutes, then cool completely on a rack.
- Filling:
- Beat together "Better than Cream Cheese" and zest and 6 Tablespoons dark brown sugar. I use a Food processor with the steel blade, Process until light and fluffy .
- Using a whisk, fold rum into the coolwhip. With a major dollop, fold the rummy coolwhip into the "cream cheese mix" to lighten, and follow with the balance of the rummy coolwhip .
- Slice bananas thinly and cover the bottom of the crust evenly.
- Lightly spread the filling over the bananas, and sprinkle with reserved crumbs.
- Chill pie, loosely covered, 20 minutes.
