Butternut Squash  Battered French Toast Recipe

  • 1 small butternut squash
  • 3/4 cups sugar
  • 1 vanilla bean
  • 1 1/2 cups flour
  • 1 1/2 cups milk
  • 1/2 teaspoon ground cinnamon
  • A pinch of nutmeg
  • 8 slices of sandwich bread ( white or egg )
  • Fresh fruit and whipped cream for garnish
  • Vanilla bean syrup

Directions
  1. Preheat the oven 400 degrees.
  2. Cut the butternut squash in half lengthwise, clean the seeds and put it in a cookie sheet.
  3. Sprinkle it with a little salt and olive oil or vegetable oil.
  4. Put it in the oven for 40 minutes.
  5. Once cooked, scrape the meat out of the squash and set it apart.
  6. Sift flour, cinnamon, nutmeg, vanilla bean seeds and sugar in a large bowl.
  7. Add milk and squash and stir until the batter has thickened.
  8. In a frying pan, melt a little butter and dip the bread slices in the batter and fry them until golden brown.
  9. Layer the French Toast and put fresh fruits on top then add the whipped cream then another French Toast on top.
  10. Pour vanilla syrup on top
