Ingredients
  • 8 ounces cavatappi pasta
  • 1 teaspoon olive oil
  • 1 teaspoon butter
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1 dried habanero pepper, finely chopped
  • 2 cups heavy cream
  • 1 large tomato, diced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground black pepper
  • 1 cup Parmesan cheese, grated

Directions
  1. Bring a large pot of lightly salted water to a boil.
  2. Add pasta and cook for 8 to 10 minutes OR until al dente.
  3. Drain.
  4. Melt butter with olive oil in a skillet over medium heat.
  5. Add shallots, garlic and habanero and cook until lightly browned.
  6. Bring cream to a simmer in a saucepan over medium heat.
  7. Stir in shallot mixture along with the tomato.
  8. Mix in the flour and pepper and simmer until thickened, 5 to 8 minutes.
  9. Stir in Parmesan cheese and remove from heat.
  10. Allow sauce to cool a few minutes before serving over pasta.
