How to make it

  • Place dates, water, ginger and golden syrup in a saucepan and bring to the boil. Reduce heat and cook for 1 minute. Remove from the heat and puree until smooth. Stir through bi-carb. Leave to cool.
  • Place butter and sugar into a large mixing bowl and beat until light and fluffy. Add the egg, one at a time, beating well after each addition. Fold in the flour, spices and date mixture.
  • Pour into a 20cm square cake tin lined with baking paper and bake in a moderate oven (170-190C) for 45 minutes or until a skewer comes out clean.
  • Sauce: Place all ingredients into a small saucepan and bring to the boil. Serve pudding with sauce and cream or ice-cream if desired.
