Sticky Date Pudding

- 200g dates shopping list
- 1 cup water shopping list
- 1/4 cup golden syrup shopping list
- 1 teaspoon bi-carb shopping list
- 1/4 teaspoon ground cloves shopping list
- 1/2 teaspoon mixed spice shopping list
- 2 teaspoons finely grated ginger shopping list
- 60g butter shopping list
- 2/3 cup caster sugar shopping list
- 2 eggs shopping list
- 1 cup self-raising flour shopping list
- Sauce: shopping list
- 2/3 cup brown sugar shopping list
- 2/3 cup thickened cream shopping list
- 80g butter shopping list
How to make it
- Place dates, water, ginger and golden syrup in a saucepan and bring to the boil. Reduce heat and cook for 1 minute. Remove from the heat and puree until smooth. Stir through bi-carb. Leave to cool.
- Place butter and sugar into a large mixing bowl and beat until light and fluffy. Add the egg, one at a time, beating well after each addition. Fold in the flour, spices and date mixture.
- Pour into a 20cm square cake tin lined with baking paper and bake in a moderate oven (170-190C) for 45 minutes or until a skewer comes out clean.
- Sauce: Place all ingredients into a small saucepan and bring to the boil. Serve pudding with sauce and cream or ice-cream if desired.
