Ingredients

200g dates

1 cup water

1/4 cup golden syrup

1 teaspoon bi-carb

1/4 teaspoon ground cloves

1/2 teaspoon mixed spice

2 teaspoons finely grated ginger

60g butter

2/3 cup caster sugar

2 eggs

1 cup self-raising flour

Sauce:

2/3 cup brown sugar

2/3 cup thickened cream

80g butter

Directions

Place dates, water, ginger and golden syrup in a saucepan and bring to the boil. Reduce heat and cook for 1 minute. Remove from the heat and puree until smooth. Stir through bi-carb. Leave to cool.

Place butter and sugar into a large mixing bowl and beat until light and fluffy. Add the egg, one at a time, beating well after each addition. Fold in the flour, spices and date mixture.

Pour into a 20cm square cake tin lined with baking paper and bake in a moderate oven (170-190C) for 45 minutes or until a skewer comes out clean.

Sauce: Place all ingredients into a small saucepan and bring to the boil. Serve pudding with sauce and cream or ice-cream if desired.
