Butter Baked Chicken Recipe
My version of Cracker Barrel's tasty down home chicken dish. I hope this version is at least a little lighter than theirs, though.

Ingredients
  • 4 boneless, skinless chicken breasts (use the best quality ones you can, as it really makes a difference)
  • 1/2 cup of all purpose flour plus 2 tbsp for butter sauce
  • 1/4 tsp salt
  • 2 grinds of peppercorns, or a healthy dash of ground pepper
  • 1 tbsp of dried parsley
  • 1 tsp grated parmesan
  • 1 tsp garlic powder
  • 1/2 stick of butter
  • 1/4 tsp dried thyme
  • 2/3 cup chicken broth

Directions
  1. Put the 1/2 cup of flour in a shallow bowl with all of the seasonings except the thyme and mix through
  2. Dredge the chicken breasts in the flour
  3. Dredge them again
  4. Place them in a glass baking dish and bake them at 375 for approx. 40 minutes
  5. Start the butter sauce by melting the butter in a heavy sauce pan, letting it color a little bit if you like
  6. Add the 2 tbsp of flour and stir over heat until well incorporated
  7. Add the chicken broth and thyme, and whisk it over medium heat until it comes to a boil and thickens
  8. Serve over the chicken, or in a gravy boat on the side
