Butter Baked Chicken

- 4 boneless, skinless chicken breasts (use the best quality ones you can, as it really makes a difference) shopping list
- 1/2 cup of all purpose flour plus 2 tbsp for butter sauce shopping list
- 1/4 tsp salt shopping list
- 2 grinds of peppercorns, or a healthy dash of ground pepper shopping list
- 1 tbsp of dried parsley shopping list
- 1 tsp grated parmesan shopping list
- 1 tsp garlic powder shopping list
- 1/2 stick of butter shopping list
- 1/4 tsp dried thyme shopping list
- 2/3 cup chicken broth shopping list
How to make it
- Put the 1/2 cup of flour in a shallow bowl with all of the seasonings except the thyme and mix through
- Dredge the chicken breasts in the flour
- Dredge them again
- Place them in a glass baking dish and bake them at 375 for approx. 40 minutes
- Start the butter sauce by melting the butter in a heavy sauce pan, letting it color a little bit if you like
- Add the 2 tbsp of flour and stir over heat until well incorporated
- Add the chicken broth and thyme, and whisk it over medium heat until it comes to a boil and thickens
- Serve over the chicken, or in a gravy boat on the side
