Sea Scallops in Apple Nagi

- For apple Nagi ( Nagi: an aromatic broth, seafood is cooked or bathed in ) shopping list
- 4 oz. honey shopping list
- 2.5 oz. mustard oil shopping list
- 2 oz. olive oil shopping list
- 1 tsp. rough ground coriander shopping list
- 10 drops of green Tabasco shopping list
- 1/2 c. finely diced apples shopping list
- 1/2 c. lime juice shopping list
- 1/4 c. small diced celery root shopping list
- 1/2 c. cilantro leaves, chopped shopping list
- drizzle of honey vinegar shopping list
- salt and pepper shopping list
- fleur de sel ( sea salt ) shopping list
- For scallops shopping list
- 6 to 8 sea scallops shopping list
- 2 rosemary sprigs shopping list
- 1 sprig of thyme shopping list
- salt shopping list
- 2 tbsp. unsalted butter shopping list
- 2 tbsp. extra virgin olive oil shopping list
How to make it
- Skewer scallops with rosemary and thyme sprigs
- .
- Season outside of scallops all the way around
- .
- Heat the extra virgin olive oil in pan until just smoking and add scallops
- .
- Sear on all sides and place in 375°F oven; on last side for 3-5 min
- .
- While in oven, mix all seasoning ingredients together and taste for seasoning
- .
- Remove scallops from oven and add butter to pan; baste for 30 seconds once butter has browned
- .
- Transfer to plate lined with paper towel and carefully remove herb sprigs
- .
- Arrange scallops on warmed plate and drizzle nage on and around scallops
- .
- Finish with honey vinegar and fleur de sel
