Ginger Molasses Cookies Recipe
These cookies are soft, chewy, and dunkable so have a glass of milk handy. A scoop of vanilla ice cream in the middle makes the best ice cream sandwiches you've ever tasted.

Ingredients
  • 1 stick butter, softened
  • ½ cup shortening
  • 1 ½ cups sugar
  • ½ cup molasses
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 4 cups all purpose flour
  • ½ teaspoon salt
  • 2 ¼ teaspoons baking soda
  • 2 ¼ teaspoons ground ginger
  • 1 ½ teaspoons ground cloves
  • 1 ½ teaspoons ground cinnamon

Directions
  1. In a large mixing bowl, cream butter, shortening, and sugar until fluffy.
  2. Beat in molasses,eggs, and vanilla.
  3. In another bowl, combine dry ingredients. Mix well with wire whisk.
  4. Gradually add flour mixture to butter mixture. Mix until well combined and smooth.
  5. Roll dough into 1 1/2" balls. Dip in granulated sugar.
  6. Place 2" apart on greased cookie sheet.
  7. Bake at 350 for 11 minutes. DO NOT OVERBAKE.
  8. Cool on wire racks then store in airtight container.
