How to make it

  • Heat butter in a large sauté pan.
  • Add shallots and sauté over medium high heat for 3 minutes.
  • Add wet greens then cover and cook stirring occasionally until completely wilted but still bright.
  • Uncover and cook until most of liquid evaporates.
  • Add cream and cook uncovered until thickened slightly.
  • Stir in nutmeg then season with salt and pepper.
