How to make it

  • Cut tomatoes in half around the hemisphere.
  • Be careful to keep skin intact then scoop pulp out into a bowl.
  • Mince garlic then add it, parsley, salt, pepper and bread crumbs to the pulp.
  • Return mixture to hollowed out skins then arrange tomatoes in lightly oiled baking dish.
  • Place under preheated broiler for 10 minutes.
