How to make it

  • Season fish with salt and pepper, then dredge one side of filets in flour
  • Saute fish, floured side down, in oil in a large saute pan over medium high heat, until golden brown, 3 minutes
  • Transfer filets to a plate, reduce heat to medium
  • Add onion, loives and garlic, saute 2 minutes
  • Stir in tomatoes, pepper flakes, and mustard.
  • Deglaze with white wine and brandy
  • Reduce heat to medium-low and simmer until thickened, 15 minutes
  • Lightly mash tomatoes with a spoon to break them up
  • Arrange filets on top ot tomato mixture, browned side up
  • Cover with a tight-fitting lid and simmer until fish flakes easily when tested with a fork, 5-7 minutes
  • Meanwhile
  • Bring chicken broth, lemon juice and olive oil to a boil
  • Remove from heat
  • Stir in couscous, parsley and zest
  • Cover and let stand 5 minutes
  • Fluff with a fork, then season with salt
