Halibut Alla Diavola With Lemon Parsley Couscous Recipe
Easy and flavorful! Halibut is topped with a spicy Italian-style tomato sauce and served over Lemon-Parsley Couscous. From one of my cooking magazines.

Ingredients
  • HALIBUT - TOMATO SAUCE
  • 4 Halibut or Sea Bass Filets (4 oz each)
  • Salt and pepper
  • 3 T all-purpose flour
  • 1 med onion, sliced
  • 1/2 c pitted kalamata olives, halved
  • 2 garlic cloves, thinly sliced
  • 4 c quartered Roma tomatoes
  • 2 t red pepper flakes
  • 1 t Dijon mustard
  • 1 c dry white wine
  • 1/4 c brandy
  • LEMON PARSLEY COUSCOUS
  • 1 3/4 c chicken broth
  • 1/4 c fresh lemon juice
  • 1 1/2 c plain dry couscous
  • 1 T olive oil
  • 2 T chopped fresh parsley
  • 1 t lemon zest
  • Salt to taste
  • Lemon wedges for serving

Directions
  1. HALIBUT - TOMATO SAUCE
  2. Season fish with salt and pepper, then dredge one side of filets in flour
  3. Saute fish, floured side down, in oil in a large saute pan over medium high heat, until golden brown, 3 minutes
  4. Transfer filets to a plate, reduce heat to medium
  5. Add onion, loives and garlic, saute 2 minutes
  6. Stir in tomatoes, pepper flakes, and mustard.
  7. Deglaze with white wine and brandy
  8. Reduce heat to medium-low and simmer until thickened, 15 minutes
  9. Lightly mash tomatoes with a spoon to break them up
  10. Arrange filets on top ot tomato mixture, browned side up
  11. Cover with a tight-fitting lid and simmer until fish flakes easily when tested with a fork, 5-7 minutes
  12. LEMON-PARSLEY COUSCOUS
  13. Meanwhile
  14. Bring chicken broth, lemon juice and olive oil to a boil
  15. Remove from heat
  16. Stir in couscous, parsley and zest
  17. Cover and let stand 5 minutes
  18. Fluff with a fork, then season with salt
