Halibut Alla Diavola with Lemon Parsley Couscous

- halibut - tomato sauce shopping list
- 4 halibut or sea bass Filets (4 oz each) shopping list
- salt and pepper shopping list
- 3 T all-purpose flour shopping list
- 1 med onion, sliced shopping list
- 1/2 c pitted kalamata olives, halved shopping list
- 2 garlic cloves, thinly sliced shopping list
- 4 c quartered roma tomatoes shopping list
- 2 t red pepper flakes shopping list
- 1 t Dijon mustard shopping list
- 1 c dry white wine shopping list
- 1/4 c brandy shopping list
- lemon PARSLEY couscous shopping list
- 1 3/4 c chicken broth shopping list
- 1/4 c fresh lemon juice shopping list
- 1 1/2 c plain dry couscous shopping list
- 1 T olive oil shopping list
- 2 T chopped fresh parsley shopping list
- 1 t lemon zest shopping list
- salt to taste shopping list
- lemon wedges for serving shopping list
How to make it
- HALIBUT - TOMATO SAUCE
- Season fish with salt and pepper, then dredge one side of filets in flour
- Saute fish, floured side down, in oil in a large saute pan over medium high heat, until golden brown, 3 minutes
- Transfer filets to a plate, reduce heat to medium
- Add onion, loives and garlic, saute 2 minutes
- Stir in tomatoes, pepper flakes, and mustard.
- Deglaze with white wine and brandy
- Reduce heat to medium-low and simmer until thickened, 15 minutes
- Lightly mash tomatoes with a spoon to break them up
- Arrange filets on top ot tomato mixture, browned side up
- Cover with a tight-fitting lid and simmer until fish flakes easily when tested with a fork, 5-7 minutes
- LEMON-PARSLEY COUSCOUS
- Meanwhile
- Bring chicken broth, lemon juice and olive oil to a boil
- Remove from heat
- Stir in couscous, parsley and zest
- Cover and let stand 5 minutes
- Fluff with a fork, then season with salt
