How to make it

  • Cover peas with water and soak for at least 8 hours.
  • Drain the peas.
  • In medium sauce pan mix ham,mint,sugar,onion and salt and cover with water.Simmer for 5 minutes.
  • Add peas and replenish water enough to cover.
  • Simmer until peas are tender.(about 45 minutes)
  • Add water as needed through the cooking process.

    Thanks for this post, it's great! My family has always put sugar in any dried peas or beans, so this is really normal to me. I've never had them with the mint, but sounds interesting! Once again, thanks!
