Halibut With Fennel Oranges And Olives Recipe

Ingredients
  • 6 tablespoons extra virgin olive oil plus more for serving
  • 2 fennel bulbs sliced paper thin
  • 6 garlic cloves thinly sliced
  • 3/4 cup dry white wine
  • 1/2 cup fresh orange juice
  • 6 pieces orange peel
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 6 halibut fillets
  • 2 oranges peeled and cut into 1/8" slices
  • 1 cup mixed pitted green and black olives
  • 6 bay leaves

Directions
  1. Preheat oven to 400.
  2. In a large oval roasting pan over medium high heat warm 3 tablespoons of the olive oil.
  3. Add fennel and garlic then cook stirring occasionally for 5 minutes.
  4. Add wine and boil for 1 minute.
  5. Add orange juice and peel and simmer for 2 minutes.
  6. Season with salt and pepper.
  7. Remove from heat.
  8. Season fish with salt and pepper and place on the fennel mixture.
  9. Drizzle fish with remaining 3 tablespoons oil.
  10. Place oranges, olives and bay leaves on and around the fish.
  11. Roast for 25 minutes.
  12. Remove bay leaves and discard.
  13. Spoon some of the liquid over the fish and drizzle with oil.
  14. Serve immediately.
