VENISON RIBS AND SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cartwright Estate in Richardson, Texas in 2002.

Ingredients
  • 5 pounds venison ribs
  • Brine made from 1 cup vinegar and 3 cups water
  • 2 tablespoons salt
  • 1 large white onion sliced
  • 3 tablespoons melted butter
  • 2 bay leaves
  • Sauce:
  • 1-1/2 cups water
  • 1 cup chili sauce
  • 1/4 cup steak sauce
  • 2 tablespoons lemon juice
  • 1 teaspoon chili powder
  • 1 teaspoon salt

Directions
  1. Cover ribs in brine then add bay leaves and onions and marinate 48 hours in refrigerator.
  2. Drain and pat dry then place ribs in shallow pan and brush with melted butter.
  3. Roast for 30 minutes at 450 basting a few times then reduce heat to 350.
  4. In saucepan combine sauce ingredients and bring to boil over medium heat.
  5. Pour sauce over ribs and bake for 2 hours basting often.
