How to make it

  • add vegetables to a bowl
  • add dressing ingredients
  • add shredded ginger
  • add salt and pepper to taste
  • toss and serve
  • * - for nut allergies, change to rice bran oil or good old EVOO
  • ** - in NZ we get this in the supermarket, you may find it in the Asian/Japanese section. It's the pink ginger sold wet in it's pickling juice. Just drain and shred the equivalent of one inch of fresh ginger
  • You can add more dressing (in proportion) if you want a wetter 'slaw.

    Kiwi would work in this, I think! Will tell you in the Spring, when the weather improves enough for salads again.
