Kiwi Coleslaw

- 1/3 red cabbage, chopped shopping list
- 1 red onion. finely chopped shopping list
- 2 carrots, peeled and grated shopping list
- 2oz peanut oil* shopping list
- 1oz balmsamic vinegar shopping list
- 1 tsp soft brown sugar shopping list
- 2 tbsp pickled ginger, shredded** shopping list
- salt and pepper to taste shopping list
How to make it
- add vegetables to a bowl
- add dressing ingredients
- add shredded ginger
- add salt and pepper to taste
- toss and serve
- * - for nut allergies, change to rice bran oil or good old EVOO
- ** - in NZ we get this in the supermarket, you may find it in the Asian/Japanese section. It's the pink ginger sold wet in it's pickling juice. Just drain and shred the equivalent of one inch of fresh ginger
- You can add more dressing (in proportion) if you want a wetter 'slaw.

PS: I was hoping that you had found a way to incorporate Kiwi Fruit. Oh well. Just curious to if it would even work! Laughing!quaziefly in ALL POINTS loved it
