Ye Ole Crab Omelet

- 8 eggs shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 tablespoon peanut oil shopping list
- 2 scallions thinly sliced including green parts shopping list
- 1 hot chili pepper finely sliced shopping list
- 6 ounces crab meat shopping list
- 1 tablespoon fish sauce shopping list
How to make it
- Beat eggs and season with salt and pepper.
- Heat oil in a large heavy skillet over moderate heat.
- Sauté scallions and chili pepper stirring frequently for 2 minutes.
- Add crab and fish sauce and cook an additional 3 minutes.
- Remove this mixture to a small plate.
- Add more oil to the pan if necessary.
- Pour beaten eggs into same pan.
- Cook using a fork to draw cooked eggs away from the edge allowing uncooked eggs to flow back towards the edge.
- Cook until firmly set on the bottom and creamy on top.
- Spoon crab mixture down the center of the omelet and fold it in half.
- Turn omelet onto a heated serving platter.
