I found that if you make ice cream with brown sugar it tastes just like butter pecan without the nuts. Here is a cheescake with that butter pecan flavor.

So not to have so much contrast in textures, it is an idea to ground the chopped pecans before adding them to the cream cheese mixture. It would even have a better look to have ground pecan garnish the sides of the cake as well.
