How to make it

  • Pour the water into a bowl.
  • Sprinkle gelatin over to soften and bloom.
  • Let stand 15 minutes.
  • Put cheese into a bowl with the rum and allow to come to room temperature, about 30 minutes.
  • In a small saucepan, heat cream and sugar over medium heat, stirring until sugar dissolves and mixture comes to 160 degrees
  • or scalding.
  • Remove from heat and pour hot cream over cheese to soften.
  • Add bloomed gelatin.
  • Whisk until smooth.
  • Pour 1/2 cup servings into six 3/4 cup ramekins.
  • Cool in refrigerator until set, at least 4 hours.
  • Toss all the garnish ingredients together, let stand 30 minutes before serving.
  • Remove ramekins from refrigerator and dip half way up in hot water to loosen, about 10-15 seconds.
  • Turn out into chilled shallow bowl and tap gently to make sure it has unmolded.
  • Spoon berries on the side and enjoy
