from the Union Square Cafe in NYC, creamy, sweet panna cotta. This uses a fresh robiola cheese, but certainly marscapone may be substituted in the recipe

Ingredients
  • 2 tablespoons water
  • 1 package unflavored gelatin (1 tablespoon)
  • 2 1/2 ounces fresh, un-aged Robiola cheese ( or a combo of marscarpone and ricotta cheese )
  • 1/2 tablespoon dark rum
  • 1 pint heavy cream
  • 1/2 cup sugar
  • Berry Garnish:
  • 1 pint strawberries, de-stemmed and halved
  • 1 tablespoon sugar
  • 1 1/2 tablespoons aged balsamic vinegar
  • 1 teaspoon fresh lemon juice
  • 3 twists fresh ground black pepper

Directions
  1. Pour the water into a bowl.
  2. Sprinkle gelatin over to soften and bloom.
  3. Let stand 15 minutes.
  4. Put cheese into a bowl with the rum and allow to come to room temperature, about 30 minutes.
  5. In a small saucepan, heat cream and sugar over medium heat, stirring until sugar dissolves and mixture comes to 160 degrees
  6. or scalding.
  7. Remove from heat and pour hot cream over cheese to soften.
  8. Add bloomed gelatin.
  9. Whisk until smooth.
  10. Pour 1/2 cup servings into six 3/4 cup ramekins.
  11. Cool in refrigerator until set, at least 4 hours.
  12. Toss all the garnish ingredients together, let stand 30 minutes before serving.
  13. Remove ramekins from refrigerator and dip half way up in hot water to loosen, about 10-15 seconds.
  14. Turn out into chilled shallow bowl and tap gently to make sure it has unmolded.
  15. Spoon berries on the side and enjoy
