How to make it

  • In a shaker filled with ice, add tequila, pineapple puree, pineapple syrup, and the juice of 1/2 fresh lemon and 1/2 fresh lime. Shake vigorously to blend the ingredients.
  • Rim a margarita glass with kosher salt and fill with ice.
  • Strain the margarita from the shaker into the glass and top with the Grand Marnier and garnish with a slice of pineapple

  • Candied Pineapple Puree and Syrup:
  • Cut the fresh pineapple into small cube pieces. In a sauce pan, place cubed pineapple, sweetened pineapple juice, light brown sugar and Pyrat XO Rum. Bring the pan to a boil while constantly stirring, reduce heat, and simmer for 5 minutes. Remove pan from the heat and let steep and cool for 20 minutes. Strain pineapple and reserve the pineapple syrup. Place the pineapple in a blender and blend until smooth.
