Tangerine Chicken Recipe
TANGERINE CHICKEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Roark Estate in Grand Prairie, Texas in 1984.

Ingredients
  • 1/4 cup of all purpose flour
  • 1 teaspoon thyme.
  • 1 teaspoon salt.
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon cayenne pepper
  • 1-1/2 pounds boneless skinless chicken cut into 24 strips
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup finely chopped white onion
  • 1 cup chicken broth
  • 1 cup tangerine juice
  • 2 tangerines peeled halved crosswise seeded and broken into segments

Directions
  1. Combine flour, thyme, salt, white pepper and cayenne pepper.
  2. Pat chicken dry and coat with flour mixture saving any extra flour.
  3. In large skillet heat olive oil and butter together over medium high heat.
  4. Once butter has melted and foam subsides reduce heat to medium.
  5. Add chopped onion and sauté 3 minutes stirring constantly.
  6. Add chicken breast strips with any remaining seasoned flour and cook 5 minutes.
  7. Stir constantly then raise heat to high and add chicken broth and tangerine juice.
  8. Bring to a boil then reduce heat and simmer 4 minutes until thickened.
  9. Add segments from 2 tangerines and simmer 3 minutes then serve with rice or noodles.
