Mexican Red Onion Soup

- 3 tablespoons olive oil shopping list
- 6 large red onions thinly sliced shopping list
- 1 tablespoon granulated sugar shopping list
- 1 teaspoon dried oregano crumbled shopping list
- 3/4 teaspoon ground coriander shopping list
- 3/4 teaspoon ground cumin shopping list
- 1/4 teaspoon ground allspice shopping list
- 1/4 teaspoon ground cinnamon shopping list
- 1/2 cup red wine vinegar shopping list
- 1/3 cup orange juice shopping list
- 1-1/2 tablespoons all purpose flour shopping list
- 7 cups chicken stock shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
How to make it
- In large pot heat olive oil over low heat then add onions and cook stirring frequently 30 minutes.
- Sprinkle onions with sugar, oregano, coriander, cumin, allspice and cinnamon.
- Cook another 20 minutes stirring occasionally then stir in vinegar and orange juice.
- Cook another 5 minutes then sprinkle with flour and cook stirring constantly for 1 minute.
- Stir in stock and bring to boil over medium then lower heat and simmer covered for 20 minutes
- Stir in the salt and pepper and serve immediately.
