Zesty Lemon Custard Pie Recipe
This is an incredible pie. Very lemony, very creamy and just down right awesome. Enjoy.

Ingredients
  • 1 stick unsalted butter at room temperature
  • 1/4 cup granulated sugar
  • 1 egg
  • 1-1/2 cups flour
  • 1/2 cup unsalted butter
  • 4 eggs
  • 1 cup granulated sugar
  • 1 tablespoon grated lemon peel
  • 2/3 cup fresh lemon juice
  • Powdered sugar for garnish

Directions
  1. Beat butter and sugar until light and fluffy then add egg and flour and mix until smooth dough is formed.
  2. With hands shape into a ball and flatten into a disc.
  3. Wrap in plastic wrap and refrigerate until chilled.
  4. Preheat oven to 350.
  5. Make pastry and roll or press dough evenly over bottom and up sides of pie pan.
  6. Melt butter in microwave and set aside.
  7. Whisk eggs and sugar in medium bowl until blended.
  8. Add peel and slowly stir in butter and lemon juice until incorporated then pour into crust.
  9. Bake for 40 minutes then cool completely and refrigerate.
  10. Before serving sprinkle powdered sugar over top.

How did I miss this? Got to give it a try... It sounds so yummy and ANYTHING with lemon or lime in it HAS to be good! I like the sounds of the shell... diffrent!
