Bobotie Recipe
Not quite a pie, not quite a curry, but you'll love it! South African friends say it is the best they have had. Serve with turmeric or saffron rice and a green salad.

Ingredients
  • Meat mix:
  • 1 tbsp cooking oil
  • 1 large onion
  • 2 cloves garlic
  • 1 inch fresh root ginger
  • 2 tsp Madras curry powder
  • 1/2 tsp turmeric powder
  • 1lb (500g) lean minced beef
  • 1 slice white bread + milk to soak
  • water
  • 1 beef stock cube
  • 1 inch cinnamon stick
  • 4 cloves
  • 1/4 tsp grated nutmeg
  • 1/2 tsp freshly ground black pepper
  • 6 dried apricots, pitted and halved
  • 6 prunes, pitted and halved
  • 2 tbsp mango chutney
  • juice of 1/2 a lemon
  • 2 tsp sugar
  • Topping:
  • 2 tbsp cornflour
  • 1/2 pt yoghurt or laban
  • 2 eggs
  • grated nutmeg
  • bay leaves

Directions
  1. Cut crust off bread, tear into small pieces and soak in milk.
  2. Finely chop onion, garlic and ginger and fry gently in oil until soft and beginning to turn golden.
  3. Add curry powder and turmeric and fry until fragrant.
  4. Add beef and continue to fry, stirring constantly, until browned.
  5. Add soaked bread and milk, then enough water to cover, and crumble in the stock cube.
  6. Pound the cinnamon and cloves in a pestle and mortar, then add these and the remaining ingredients.
  7. Stir well, cover and simmer for about 1/2 hour.
  8. Heat the oven to 180c (350f) and meanwhile make the topping.
  9. Combine cornflour and yoghurt in a bowl, beat in the eggs, and stir in 1/2 tsp grated nutmeg.
  10. Put the bobotie mix into a casserole dish and smooth over with the topping.
  11. Decorate with bay leaves and grated nutmeg.
  12. Bake for 40 minutes or until browned.
