How to make it

  • Cut crust off bread, tear into small pieces and soak in milk.
  • Finely chop onion, garlic and ginger and fry gently in oil until soft and beginning to turn golden.
  • Add curry powder and turmeric and fry until fragrant.
  • Add beef and continue to fry, stirring constantly, until browned.
  • Add soaked bread and milk, then enough water to cover, and crumble in the stock cube.
  • Pound the cinnamon and cloves in a pestle and mortar, then add these and the remaining ingredients.
  • Stir well, cover and simmer for about 1/2 hour.
  • Heat the oven to 180c (350f) and meanwhile make the topping.
  • Combine cornflour and yoghurt in a bowl, beat in the eggs, and stir in 1/2 tsp grated nutmeg.
  • Put the bobotie mix into a casserole dish and smooth over with the topping.
  • Decorate with bay leaves and grated nutmeg.
  • Bake for 40 minutes or until browned.
