Bobotie

- Meat mix: shopping list
- 1 tbsp cooking oil shopping list
- 1 large onion shopping list
- 2 cloves garlic shopping list
- 1 inch fresh root ginger shopping list
- 2 tsp Madras curry powder shopping list
- 1/2 tsp turmeric powder shopping list
- 1lb (500g) lean minced beef shopping list
- 1 slice white bread + milk to soak shopping list
- water shopping list
- 1 beef stock cube shopping list
- 1 inch cinnamon stick shopping list
- 4 cloves shopping list
- 1/4 tsp grated nutmeg shopping list
- 1/2 tsp freshly ground black pepper shopping list
- 6 dried apricots, pitted and halved shopping list
- 6 prunes, pitted and halved shopping list
- 2 tbsp mango chutney shopping list
- juice of 1/2 a lemon shopping list
- 2 tsp sugar shopping list
- Topping: shopping list
- 2 tbsp cornflour shopping list
- 1/2 pt yoghurt or laban shopping list
- 2 eggs shopping list
- grated nutmeg shopping list
- bay leaves shopping list
How to make it
- Cut crust off bread, tear into small pieces and soak in milk.
- Finely chop onion, garlic and ginger and fry gently in oil until soft and beginning to turn golden.
- Add curry powder and turmeric and fry until fragrant.
- Add beef and continue to fry, stirring constantly, until browned.
- Add soaked bread and milk, then enough water to cover, and crumble in the stock cube.
- Pound the cinnamon and cloves in a pestle and mortar, then add these and the remaining ingredients.
- Stir well, cover and simmer for about 1/2 hour.
- Heat the oven to 180c (350f) and meanwhile make the topping.
- Combine cornflour and yoghurt in a bowl, beat in the eggs, and stir in 1/2 tsp grated nutmeg.
- Put the bobotie mix into a casserole dish and smooth over with the topping.
- Decorate with bay leaves and grated nutmeg.
- Bake for 40 minutes or until browned.
