TOP OF THE MORNING SUN DRIED TOMATO JACK PIZZA This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981.

Ingredients
  • 2 tablespoons cornmeal
  • 1 pound frozen pizza dough thawed
  • 1/2 pound lean ground beef
  • 1/2 cup pizza sauce
  • 2 cups shredded pepper jack cheese with sun dried tomatoes
  • 1 small red or yellow bell pepper cut into thin strips
  • 1/2 cup fresh corn
  • 2 teaspoons freshly ground black pepper
  • 1/4 cup grated parmesan cheese
  • 3 tablespoons green onions thinly sliced
  • 2 tablespoons ripe black olives sliced

Directions
  1. Sprinkle cornmeal on large baking sheet.
  2. Press pizza dough into an oval shape then cover with plastic wrap and refrigerate.
  3. Heat gas grill to medium or prepare charcoal grill for medium coals.
  4. Cook ground beef in non-stick skillet until no longer pink then drain off fat.
  5. Carefully remove pizza dough from baking sheet and place on grill.
  6. Cover and cook 5 minutes.
  7. Remove pizza crust from grill and place on baking sheet grilled side up.
  8. Spread pizza sauce over crust then sprinkle with half of the sun-dried tomato jack cheese.
  9. Add the cooked ground beef, peppers and corn then sprinkle with remaining sun-dried tomato Jack cheese then season with pepper.
