How to make it

  • Cut the bread diagonally into 3/4-inch-thick slices and place in one or more dishes large enough to hold the slices in a single layer.
  • In a bowl, whisk together the eggs, flour, sugar, baking powder, vanilla, milk, beer and a pinch of salt.
  • Pour over the bread slices, turning to soak both sides.
  • Cover with plastic wrap and refrigerate overnight or at least 1 hour.
  • Heat the oven to 350 degrees.
  • In a very large ovenproof skillet, melt the butter over medium heat.
  • Add the soaked bread to brown on one side.
  • Turn the bread over and place the skillet in the oven for 10 to 12 minutes, until the toast is puffed and golden brown on the bottom.
  • Do in batches if necessary.
  • Serve immediately with additional butter and maple syrup.
