How to make it

  • Place the potatoes, red pepers and thyme on a greased baking sheet
  • Drizzle with 3 Tbs oil.
  • Bake 400F uncovered about 30 minutes or tender, stirring once
  • Cook broccoil, drain and place in ice water and drain and set aside and pat dry
  • In a large bowl combine the roasted vegetables, broccoli, cheese, kernals, remaing oil and salt and pepper to taste.
  • Genrly toss and serve
  • Beautiful and tasty!
