Ingredients
  • 1 Ripe Breadfruit
  • 2 oz. Butter
  • 6 oz. grated Cheese reserve some cheese to sprinkle on top.
  • 8 teaspoons Milk
  • 1 green sweet Pepper or 1 Red sweet pepper chopped
  • 1 medium size Onion chopped
  • 2 eggs
  • Salt & Pepper to taste

Directions
  1. Peel breadfruit and boil in salted water.
  2. Drain well and mash with butter and milk
  3. When breadfruit is creamed, add egg yolks, onions, green or red pepper and grated cheese.
  4. Whisk egg whites until fluffy and fold lightly into mixture
  5. Pour into a well greased pie dish.
  6. Top with grated cheese
  7. Bake in the centre of a moeate oven 300 degrees F for 30 minutes or until the top becomes golden
