Creamy Cheesecake With Balsamic Strawberies Recipe

One heck of a tall, creamy ( not dense ) version of a very delcious cheesecake. Made it for my birthday party and this was in competition with the Tiramisu bowl I made. Strawberries were served on the side.

Ingredients
  • Macaroon crust:
  • 1 cup coconut or almond macaroons, home made or store bought
  • Filling:
  • 2 1/2 lbs cream cheese ( 5 pks )
  • 1 2/3 cup sugar
  • dash salt
  • 2 Tbs cornstarch
  • juice and zest from a lemon
  • 1 tsp vanilla
  • 5 large eggs
  • 1/4 cup cream
  • Topping; ( all optional )
  • Chocolate hazelnut spread
  • 1 pint strawberries
  • 1/4 cup sugar
  • Aged balsamic vinergar to taste

Directions
  1. Use a 9 inch buttered springform pan
  2. Blenderize some soft macaroon cookies ( about 1 cup ) and press/sprinkle into bottom and sides of pan
  3. Whip the cream cheese smooth and then whip in the sugar, vanilla, lemon zest and juice till well mixed
  4. Sift on the cornstarch and blend into cheese mixture.
  5. Beat all the eggs together and then blend in slowly to creamed mixture until well blended.
  6. Pour into prepared pan,
  7. Bake 300F in a water bath until custard seems set in center , may be about 2 hours or so.
  8. Remove from water bath and cool completely on rack.
  9. When cool, chill overnight in refrigerator.
  10. Topping, melt some chocolate hazelnut spread and drizzle over cake ina pattern
  11. Chill again to firm up chocolate
  12. Optional topping offered as a side
  13. Mix the strawberries, sugar and vinegar to taste.
  14. Chill one hour.
  15. Serve over cake or along the side if desired.
