Creamy Cheesecake With Balsamic Strawberies

- Macaroon crust: shopping list
- 1 cup coconut or almond macaroons, home made or store bought shopping list
- Filling: shopping list
- 2 1/2 lbs cream cheese ( 5 pks ) shopping list
- 1 2/3 cup sugar shopping list
- dash salt shopping list
- 2 Tbs cornstarch shopping list
- juice and zest from a lemon shopping list
- 1 tsp vanilla shopping list
- 5 large eggs shopping list
- 1/4 cup cream shopping list
- Topping; ( all optional ) shopping list
- chocolate hazelnut spread shopping list
- 1 pint strawberries shopping list
- 1/4 cup sugar shopping list
- Aged balsamic vinergar to taste shopping list
How to make it
- Use a 9 inch buttered springform pan
- Blenderize some soft macaroon cookies ( about 1 cup ) and press/sprinkle into bottom and sides of pan
- Whip the cream cheese smooth and then whip in the sugar, vanilla, lemon zest and juice till well mixed
- Sift on the cornstarch and blend into cheese mixture.
- Beat all the eggs together and then blend in slowly to creamed mixture until well blended.
- Pour into prepared pan,
- Bake 300F in a water bath until custard seems set in center , may be about 2 hours or so.
- Remove from water bath and cool completely on rack.
- When cool, chill overnight in refrigerator.
- Topping, melt some chocolate hazelnut spread and drizzle over cake ina pattern
- Chill again to firm up chocolate
- Optional topping offered as a side
- Mix the strawberries, sugar and vinegar to taste.
- Chill one hour.
- Serve over cake or along the side if desired.
