How to make it

  • Use a 9 inch buttered springform pan
  • Blenderize some soft macaroon cookies ( about 1 cup ) and press/sprinkle into bottom and sides of pan
  • Whip the cream cheese smooth and then whip in the sugar, vanilla, lemon zest and juice till well mixed
  • Sift on the cornstarch and blend into cheese mixture.
  • Beat all the eggs together and then blend in slowly to creamed mixture until well blended.
  • Pour into prepared pan,
  • Bake 300F in a water bath until custard seems set in center , may be about 2 hours or so.
  • Remove from water bath and cool completely on rack.
  • When cool, chill overnight in refrigerator.
  • Topping, melt some chocolate hazelnut spread and drizzle over cake ina pattern
  • Chill again to firm up chocolate
  • Optional topping offered as a side
  • Mix the strawberries, sugar and vinegar to taste.
  • Chill one hour.
  • Serve over cake or along the side if desired.
