BEEF AND MANGO FAJITAS

- 1 pound sirloin steak, cut 1 inch thick shopping list
- 1/4 cup olive oil shopping list
- 1/4 cup lime juice shopping list
- 2 tablespoons fajita seasoning shopping list
- 3/4 teaspoon dried oregano shopping list
- 1 cup thinly sliced red onion shopping list
- 8 (8-inch) flour tortillas shopping list
- 2 cups sliced mango shopping list
How to make it
- trim fat from steak. Place steak in resealable plastic bag. For lime mixture, stir together oil, lime juice, fajita seasoning and oregano. Reserve 2 tablespoons of marinade mixture; pour remainder over meat. Seal bag; refrigerate 4 to 24 hours, turning occasionally.
- Preheat grill to medium temperature. Place onions on an 18-inch square of heavy-duty foil. Drizzle with reserved lime juice mixture. Securely seal onions in foil. Wrap tortillas in sperate foil.
- Drain steak, discard marinade. Grill 14-18 for medium rare, turning once. Add foil package of onions to grill during the last 10 minutes of grill time. Add tortillas the last 5 minutes.
- Thinly slice meat. Serve with onions and sliced mango in warm tortillas.
